Fat Back is exactly what it sounds like — fat from the back of our pasture-raised pigs. Commonly used in charcuterie like mortadella and salami, Fat Back lends rich flavor to ground meat. Add ground Fat Back to meatballs and watch them melt in your mouth. Fat Back is also used in traditional Southern cooking to add depth to dishes like grits, gumbo, or black eyed peas. When fried, Fat Back is a delicious, almost bacon-like treat.
Fat Back can also be used to make lard. Simple melt Fat Back over low heat, and strain any solid bits. Pour into glass jars and cool until hardened. Store in the refrigerator. Just like our cows, our hogs are pasture raised, hormone and antibiotic-free.
